Dairy Free Egg Free Biscuits

One of the things I often miss about cooking dairy free & egg free is fresh homemade biscuits! I have tried several recipes over the years and haven’t been able to find a good recipe that we love yet.

I’ve often thought that we’ll always be resigned to eating canned biscuits from Aldi’s forever.

I saw this recipe on I Heart The Mart for 7Up Biscuits and decided to tweak it a little to be Dairy & Egg Free.   Everyone was so excited about the results.  They were absolutely delicious!  They tasted kinda like Hardees Biscuits.

We had them for dinner with Chicken, but they would be awesome for breakfast too with some jelly inside!

Dairy Free Egg Free Biscuits

Ingredients

  • 3 Cups Bisquick
  • 1/3 Cup Melted Dairy Free Margarine(I use Squeeze Parkay in the Blue Bottle)
  • 1 Container Plain Dairy Free Yogurt (like So Delicious or Whole Soy & Co)
  • 3/4 Cup Lemon Lime Soda(7Up, Sprite, or Sierra Mist)

Instructions

  1. Preheat Oven to 450 Degrees
  2. Melt Margarine onto 9x13 pan and set aside
  3. Stir Bisquick and 7up Together
  4. Add Soda to Mixture
  5. Spread dough out onto cutting board with Biscuit Mix sprinkled on it
  6. Add a little mix as needed and pat in until no longer sticky
  7. Roll out and cut out biscuits using a glass or biscuit cutter
  8. Place biscuits in pan
  9. Bake for 12 minutes in 450 degree oven or until Golden Brown

Dairy Free, Egg Free Pumpkin Muffins

Pumpkin is one of those flavors that I can’t get enough of during this time of year.  Pumpkin flavored coffee, lattes, bread, pies, and now muffins!  These are so delicious!  I made these a while back during a freezer cooking day and they are so good.  They’re perfect for a quick snack or breakfast with some fruit.  My guys and gal loved these as well.  Add a little dairy free margarine on top and…well, so yummy!!

Dairy Free, Egg Free Pumpkin Muffins

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 12 Muffins

These muffins are perfect for a cool fall day. I always have to double this recipe to feed my family but this makes enough for 12 muffins.

Ingredients

  • 2 Cups Flour
  • 3/4 Cup Sugar
  • 1 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/4 tsp Nutmeg
  • 1 can Pumpkin
  • 1/2 cup Milk Substitute(I used soy milk)
  • 1/2 cup Oil(I used Coconut Oil)
  • 1 tbsp Vanilla

Instructions

  1. Preheat oven to 350
  2. Place 1st 7 ingredients into a bowl
  3. Stir
  4. Place remaining 4 ingredients into a separate bowl
  5. Stir
  6. Add wet ingredients into dry ingredients
  7. Stir Well
  8. Spoon into greased muffin tins
  9. Bake at 350 for 30 minutes or until knife inserted in center comes out clean.
  10. Enjoy!

Donuts with Sugar Glaze – Dairy Free & Egg Free

Dairy Free Egg Free Donuts

Every child should have a doughnut every now and then! Or is it donut?  According to the googles, both ways of spelling are ok so I will just mix it up a little. 🙂  I am always looking for new ways to make treats for all my kiddos, and I have been looking for a good donut recipe to try.  I remembered back in home-ec class during high school when we learned how to make biscuit dough.  Then they taught us how to make other things using that dough like cinnamon rolls and…Donuts!!  I decided to give it a try, but I really didn’t have time to roll and knead dough so I pulled out the canned biscuits.  It was quick, easy, and SOOOOO delicious!  I used can biscuits from Aldi which don’t have eggs or milk.  Make sure you read the entire package though because many of them do have milk.  Enjoy!

Dairy Free Egg Free Donuts with Sugar Glaze
Recipe Type: Dessert

Serves: 6
These donuts are great for a special treat or even for breakfast. My kiddos love them and I love being able to treat my food allergic kiddos to something they can’t normally have, and these are SO Easy!
Ingredients
  • Canned Biscuits (Read the label to find some that do not contain dairy or egg). Most do contain wheat or so so you’d have to find an alternative if you avoid those allergens).
  • 2 Cups Oil , any will do – I use Coconut Oil
  • For Glaze:
  • 1 Cup water
  • 2 Cups Sugar
Instructions
  1. Put Oil in Large Skillet and turn to medium high
  2. Spread Biscuits out on Cutting Board
  3. Make holes in biscuits – I used an apple corer to make them, but you can use whatever you have around.
  4. Add Donuts to heated oil(make sure at least half the donut is submersed.
  5. Fry in oil until browned(less than a minute- Watch them closely or they will burn)
  6. Turn over and brown the other side
  7. Remove from skillet.
  8. To Make Glaze:
  9. Add water to Saucepan, bring to a boil
  10. Turn down heat and add sugar
  11. stir frequently until you have a syrupy texture.
  12. Dip donuts in Glaze with tongs(fully submerge).
  13. Set on Cookie sheet to cool
  14. Enjoy!

One of our family’s favorite types of food is Asian, and with the food allergies we hardly get a chance to go out to an Asian restaurant. Here’s one of our favorite recipes that I came up with so we can enjoy it at home.
Ingredients
  • 1 lb Boneless Skinless Chicken
  • Lettuce Leaves
  • 1/4 Cup Oil (I used Coconut Oil)
  • 1/4 Cup Soy Sauce
  • 1/2 Cup Onion Finely Chopped
  • 1/2 tsp Red Pepper Flakes(optional)
  • 1 tsp. Garlic Powder or use 1 Clove Fresh Garlic Finely Chopped
  • 1/4 Cup Rice Vinegar
  • 1/4 Cup Brown Sugar
Instructions
  1. Cook the Chicken in the Oil until done
  2. Remove chicken and chop into small pieces
  3. In a Separate Bowl combine all other ingredients except onions & lettuce, stir
  4. Put Chicken in above Bowl and toss to coat
  5. Saute’ the onions for a minute in same skillet until soft
  6. Add Coated Chicken back into skillet and cook until warmed through
  7. Serve over lettuce

Dairy Free, Egg Free Meatloaf Recipe

Meatloaf has been one of our favorite meals for years.  My meatloaf recipe has changed over the years to reflect our family’s changing needs.  I always used to put eggs in the meatloaf to help it stick together.  When we first found out that my boy has an egg allergy I would make him a separate one in a small dish and omit the egg.

It was ok that way, but just not delicious.

I finally decided to try and come up with a recipe that we can all enjoy.   This meatloaf is so moist and so delicious.  This is one of our family’s favorite comfort foods!

Dairy Free, Egg Free Meatloaf Recipe

Ingredients

  • 2 lbs Ground beef
  • 1 Cup Oatmeal
  • 1/2 Onion, Chopped
  • 1/2 cup Ketchup for
  • Salt & Pepper
  • 1/2 cup Ketchup for topping
  • Garlic Salt or Garlic Powder to taste(just a little)

Instructions

  1. Preheat oven to 350 degrees
  2. Dump 1st 5 Ingredients into a baking dish
  3. Mix together by hand(My boys like to do this part)
  4. Spread remainder of Ketchup across top
  5. Sprinkle the Garlic Salt across top of Ketchup
  6. Bake at 350 for about 45 minutes
  7. Drain off grease
  8. Enjoy!

Dairy Free Egg Free Chicken Nuggets

I posted this recipe on My Other Site a while back before I started Food Allergy Cooking, and I wanted to share it on here.  I love to make a ton of these when I find a good deal on boneless skinless Chicken Breasts.  My kiddos & hubby loves these.  They remind me alot of southern fried chicken like my grandmother makes.

Dairy Free, Egg Free, Nut Free Pancakes

It literally took years to find a good recipe for pancakes that my whole family can eat.  I tried making regular pancakes with egg replacer as well as many other recipes, but none were good enough that we just loved them.  I stumbled across this one from Food Allergy Mamaone day and it has been my go to recipe ever since.

My Whole Family loves this recipe for Warm Dairy, Egg, and Nut Free Pancakes.  I use soy milk in the recipe, and also substitute Coconut Oil for the vegetable oil.  These freeze well also.  I always make extra so we can have them twice without all the fuss.

These are so good, and you can add blueberries or dairy free chocolate chips to give them a great flavor!

Peanut Butter Alternative

One of the most difficult things to eliminate from our home has been peanut butter. We love the stuff!

We have tried many different kinds, and have found our favorite –Safe 4 School WOWBUTTER Tastes Just Like Peanut Butter.

Despite the long gimmicky name it really does Taste just like peanut butter.  I have used it to cook with, in smoothies, as well as spreading on a sandwich and we have had no complaints.  Not even from family members who eat peanut butter at home.

The only place I’ve found it around here is at Walmart for about $3.95/each.  You can also get Safe 4 School WOWBUTTER Tastes Just Like Peanut Butter from Amazon.com.

Our Food Allergy Story

Hello!  I’m Holly and I am married to my best friend Bryan.  We have 6 wonderfully amazing children ages 8,7,6,5, 4 & 4.

Our 8 year old has a life threatening anaphylactic allergy to Peanuts and Tree Nuts, and our 5 Year Old has an Egg and Milk Allergy.

Our journey with Food Allergies began when my oldest(now 8 yrs old) was about 15 month old. He began randomly(or so it seemed) breaking out into hives, itching, and having other allergic responses.  Had had always had Eczema which we had pretty much under control with our post-bath regimen.

But this was different somehow.

At first we thought it was environmental because Bryan has alot of allergies to dust, dander, trees, plants, etc.  We immediately switched to allergen free laundry detergent, lotions, soaps, etc.

The incidents still happened! By the time he was around 18 months our pediatrician recommended we take him to a pediatric allergist for further testing.

The diagnosis we received that day changed our lives.

“Your son has a peanut allergy” were the words we heard from the doctor that day.  At that time we were disappointed, but did not really understand the magnitude of this allergy.  The doctor sent us home with literature to read and a prescription for an Epi-pen, and let us know to give them a call if we have any questions.

At that point knew we would no longer allow him to eat peanut products, but really hadno clue about the life changes we would be making in the next few years.

We have since learned that he’s also allergic to pecans, that he can’t even smell peanuts/peanut butter, we can’t have it in the house, etc.  He is now 8 years old and his allergy is not improving as we hoped it would so we just have to take it day-by-day and adapt to this peanut loving world we live in.

After much research and many mistakes we have finally come to learn his triggers and how he will respond, but it is a constantly changing learning experience.  The things we have learned from my oldest son’s allergies have helped us to be much more prepared when our 4th born child was diagnosed with a Milk and Egg Allergy.

It’s just very interesting that 4 of our children are perfectly free of allergies and asthmawhile 2 of our boys struggle with these things daily.  We don’t know why these things happen, but thankfully God does.   He has a plan for each of these little ones, and our job is to teach them to handle it.

I sincerely pray that they grow out of their food allergies one day, but if not then my goal is to teach them to be safe, and to learn how to have as normal a life possible with these life threatening allergies.

On this site I will share a glimpse into our personal lives and experiences with food allergies.  I will also share the things I have learned about cooking for kids with food allergies.

I don’t claim to be an expert on food allergies.  I’m just a mom who has learned(and still learning) what’s worked for our food allergy family. I’d love to hear your ideas about living with food allergies!
