Dairy Free Hot Chocolate Bombs

Keep reading for a delicious Dairy Free Hot Chocolate bomb recipe!

Have you seen these super fun Hot Cocoa Bombs going around right now! They are SO NEAT! You just drop the bomb into hot milk or water & it explodes with chocolat-ey, marshmallow-ey goodness! I have wanted to try to make these dairy free ever since I first saw them.

People with milk allergies want the good stuff too, right?

If you want to try these for yourself check out this recipe for Dairy Free Hot Cocoa Bombs! First you will need chocolate chips, cocoa powder, sugar, and mini marshmallows.

Plus, you’ll need some kind of a mold like the one linked below:

Hot Chocolate Mold

Once you have gathered all your ingredients you can get started by melting the chocolate chips in the microwave in a microwave safe bowl.

Next, you will want to start spreading the melted chocolate into your molds.

Let them freeze for about 5 minutes then remove them from the molds.

Now it’s time to fill half of the molds with your cocoa, sugar, & marshmallows. Then, warm the edges of each semicircle using a warm plate (see details below). Immediately press the sides together, then place in the freezer to seal them up.

To use the hot cocoa bombs, place them in a mug and pour 2 cups hot milk over the top. Stir until the hot cocoa bombs are completely melted and enjoy!

Dairy Free Hot Chocolate Bombs

Hot chocolate bombs made completely dairy free!

Ingredients
  

  • 2 Cups Dairy Free Chocolate Chips I used Enjoy Life
  • 1 Cup Cocoa Powder
  • 1 Cup Granulated Sugar
  • 2 Cups Mini Marshmallows

Instructions
 

  • Place chocolate chips in a microwave safe bowl and melt in the microwave per the directions on the package.
  • Place 1 tbsp melted chocolate chips into one half of a bomb mold and, using the bottom of your tablespoon measuring spoon, press the chocolate up the sides of the mold, keeping it thick but even. Repeat with 12 bomb mold halves.
  • Place the chocolate filled bomb molds into the freezer for 5 minutes.
  • Remove molds from the freezer and gently tap the sides of the mold, pressing on one side of the chocolate to make the chocolate slid out of the mold.
  • Fill 6 of the molds with 1 tbsp cocoa powder, 1 tbsp sugar,  and 8-10 mini marshmallows.
  • Heat a plate or a flat-bottom bowl in the microwave until the surface of the plate is warm to the touch.
  • Press one of the empty chocolate bomb halves open-side-down onto the flat portion of the warm plate for about 10 seconds. This will gently melt the rim of the chocolate cup.
  • Immediately press this warmed edge chocolate cup to the top of one of the filled cups. This will join the two halves of the hot cocoa bomb. If desired, add more of the chocolate melts to help shore-up that joint.
  • Place the hot cocoa bombs into the freezer for 5 minutes to get them to set, then remove and store in an airtight container until you’re ready to use.
  • To use the hot cocoa bombs, place them in a mug and pour 2 cups hot dairy free milk over the top. Stir until the hot cocoa bombs are completely melted and enjoy!

Cooking for kiddos or family members with food allergies can be a bit daunting at times, especially during the holidays.  Some of our family favorites like Pumpkin Pie and Cornbread dressing have to be altered or even eliminated due to food allergies.  One of my goals each year is to make sure my food allergy kiddos have a wonderfully delicious holiday meal full of traditional favorites but free from their allergens.

Dairy Free, Nut Free No Bake Oatmeal Cookies

No-Bake oatmeal cookies have always been a favorite in my family while growing up.  My grandmother used to make this, and they are so amazingly delicious!  I definitely wanted my kiddos to be able to enjoy these wonderful treats, but the original recipe contains milk, butter, and even peanut butter.  My two boys with food allergies wouldn’t be able to have them prepared that way so I wanted to see if they would turn out just as well with alternative ingredients.  They definitely did!  These no-bakes are AMAZING and hubby & the kids would agree.  Here’s how to make them:

Dairy Free, Nut Free No Bake Oatmeal Cookies
Recipe Type: Dessert

Ingredients
  • 1/2 cup dairy free butter (like squeeze Parkay)
  • 1/2 cup Coconut Milk
  • 1/2 cup soy butter or sunbutter
  • 1/2 cup cocoa powder
  • 1 tsp vanilla
  • 3 cups quick oats
Instructions
  1. In a medium sauce pan over medium high heat combine first 4 ingredients. Once butter is melted stir in cocoa powder and whisk until combined.
  2. Then add sun or soy butter, stir until smooth, and bring to a low boil. Let boil for 1 minute.
  3. Remove from heat and stir in vanilla and oats until completely coated.
  4. Drop by rounded tablespoons on a piece of parchment paper or foil and press gently to flatten.
  5. Place cookies in freezer for 15-20 minutes or until set. Store leftovers in an airtight container in the fridge.

Chevron Holiday Tablescape Idea

We got a new dining set this year for Thanksgiving.  The kids and I were so excited when Bryan brought it home last week.  We have always had hand me down, used and mismatched tables and chairs so being able to have a new one this year is such a blessing.  My favorite thing about it is that is actually seats all 8 of us in matching seats.  Now we can have a lovely table set for the holidays like this beautiful chevron tablescape.  I just love the beautifully festive colors.  If you’d like to create this tablescape for your own table read more below.

Are you a big fan of Chevron? It seems to be one of the must-have styles in clothing, decor and more.   I have the perfect tablescape you can create for the holidays.
We’re going to take a little bit of modern and mix it with a little bit of the natural look. I give you a Red & White Chevron Natural Christmas Tablescape.

Supply List (Table Setting based on a set of 4. You can adjust this to fit your needs)

4 Red Chargers
4 Linen Chargers
4 White Bowls
4 Crystal Glassware
Silverware
4 Red Napkins
4 White Basic Plates
4 Red & White Chevron Salad Plates
  1. Roll out a vinyl natural looking paper.
  2. Set each place setting with a Red Charger, Linen Charger, White Plate followed by the Red & White Chevron Salad Plate.

  4. Set a white bowl to the left of each place setting. Fill it with fun Christmas color decor. I used 2 small rustic wood balls and a red one. ( Resource: Pier 1 Imports)Red and White Chevon Natural Christmas Tablescape-26 
  5. For the center of the table, I used a Natural Christmas Garland to lay in the center of the table.

  7. Place small red lanterns by each table place setting.
  8. At the end of the table, you can add some Christmas decor to help complete this festive look. I added cardboard cones (picked up from Hobby Lobby), as well as a Christmas wreath and small jars filled with red Christmas decorative balls.Red and White Chevon Natural Christmas Tablescape-13

Vegan Spice Gluten Free Cornbread Dressing

There isn’t much that beats the comfort of my grandmother’s cornbread dressing for Thanksgiving and Christmas.  I have a Dairy free and Egg Free Cornbread dressing recipe that we have used for the past couple of years and it is sooo delicious!  You can see it here.

If you want to spice things up a little bit you will love this alternate version.  It can also be made Gluten Free!

NOTE:  PLEASE read the ingredient information for your own family’s allergens before making any of this to make sure it is safe.

First you will need to make the cornbread.  There is a great recipe here from Minimalist Baker that you can adapt to fit your needs.  Make the following adaptations to fit it to this recipe:

Vegan Cornbread Dressing Recipe-9

  1. Use Gluten Free Cornbread mix to make it gluten free. Use it in place of the flour and cornmeal.  (Note:  Bob’s Red Mill is not nut free!!)
  2. Multiply the ingredient amounts x 6 to make enough for the dressing.
  3. Substitute the Almond milk for unsweetened coconut milk or soy milk if you are nut free like us.

Once you have your cornbread baked do the following.  Chop up all your veggies and have them ready to dump in.

Next up you want to crumble your cornbread up into a bowl, then add your seasonings and veggies.

Stir it all together really well.

Add in the Olive oil and vegetable stock.  Mix well.  Pour into a Casserole dish and bake for 45 minutes at 350 degrees.  Garnish with Sage Leaves and Enjoy!

Vegan Cornbread Dressing Recipe-35

Vegan Spice Gluten Free Cornbread Dressing
This vegan spice gluten free cornbread dressing puts a delicious twist on an old classic.
Ingredients
  • 5 cups of vegan cornbread
  • 1/2 cup sweet Vidalia onion, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup Swiss chard stalk, diced
  • 3 cloves of garlic, diced
  • 1 1/2 tablespoons of Old Bay seasoning
  • 2 tablespoons ground sage
  • 1 teaspoon of fresh cracked black pepper
  • 3/4 teaspoons of course sea salt
  • 3 tablespoons of olive oil
  • 1 1/2 cup vegetable stock
  • Kosher salt, to taste
  • 6-8 Fresh Sage Leaves. garnish
Instructions
  1. Preheat oven to 350 degrees
  2. In a large casserole dish spread crumbled vegan cornbread evenly.
  3. Season crumbled cornbread with sage, Old Bay, fresh cracked black pepper and Kosher salt to taste.
  4. Add onions, red and green bell pepper, Swiss chard stalks and garlic
  5. Drizzle with olive oil and vegetable stock, mix well.
  6. Bake in the oven for 45 minutes.
  7. Serve.

Allergy Alert: Epinephrine Injector Recall!

One of my Facebook friends messaged me about this today, and I wanted to let you guys know about it right away.  We use the Epipen which isn’t included in this recall, but if you use the Auvi-Q injector you will want to check this out.  There have been reports about malfunctions with the injector.
