Orville Redenbacher Popcorn Recall

I wanted to let you all know about a recall that I just heard about this morning.  If you buy Orville Redenbacher popcorn and have food allergy concerns you might want to check your bags.

Conagra has recalled their Orville Redenbacher’s Classic Kettle Korn Ready-to-Eat Popcorn.  This recall is due to an undeclared milk allergen.  Apparently some of the Cheddar popcorn was packaged into the wrong bags.

Dairy Free Cream of Chicken Soup Recipe

There are so many casserole recipes and other dishes that I would love to make for my kiddos, but unfortunately they call for canned cream of chicken soup.  Not only are the canned condensed cream of soups high in sodium but they also contain dairy.  In fact I have yet to find a canned one that does not contain dairy.  But..there is good news.  You can make it at home yourself without dairy PLUS it’s much healthier.

Dairy Free Cream of Chicken Soup Recipe

This recipe makes about 2 freezer bags of soup. 1 bag is equivalent to 1 can of soup.

Ingredients

  • 2 Cups Chicken Broth
  • 2 Cups Alternative Milk (I used Coconut Milk)
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 1 Cup Flour

Instructions

  1. Bring to a boil first 4 ingredients
  2. Turn heat down to medium
  3. Very Slowly Whisk in flour(Be sure to not let it clump up)
  4. Turn heat back up to med-high and bring back up to a boil. (continue whisking frequently).
  5. Continue to boil and whisk until it thickens.
  6. Let Cool and split into Freezer Bags.(2 Cups Per Bag)

Bulk Bins and Food Allergies

If you know me then you know that I love to save money.  Who doesn’t?!? One of the best ways to save money on grocery items is to buy in bulk.  ESPECIALLY if you have to cook from scratch much of the time due to food allergies.

A couple of weeks ago Earth Fare was having a sale on their Bulk Items.  You could get 20% off on Bulk Items.  On a whim I decided to grab a bag of brown rice (see the picture below).  I’m not really sure what I was thinking because while I saved 20%, I actually wasted the entire price because I CAN NOT bring myself to use it.

I have so many thoughts running through my head about it. Such as…..

What if someone used the same scoop to get nuts?

What if this container previously stored nuts??

What if a kid who just got done with a PB&J stuck their hand in there?  (Could happen, right?)

What type of controls do the stores have to eliminate cross-contamination?

among other things….

I just don’t feel that it’s safe enough for my food allergy kiddos to eat it so I’ll be blessing someone else with this nice brown rice.  That way it won’t be a total waste.
